The Restaurant Chef (Coffee shop)  oversees, creates, and guides the daily operations of the restaurant. The Chef leads the team by setting an example, consistently highlighting communication skills and a dedication to outstanding cuisine.

Duties:

  • Creates and implements innovative, high-quality menus to enhance the guest dining experience.
  • Leads by example with a hands-on approach, actively assisting the culinary team during busy periods.
  • Supervises and prepares consistent, high-quality food for the restaurant.
  • Manages all food and labor costs, identifies operational needs, and implements effective solutions.
  • Works closely with the Purchasing Department to maintain proper inventory, par levels, and purchasing controls.
  • Partners with upper management to plan menus, specials, and future development strategies.
  • Develops and maintains all recipe documentation, production schedules, food specifications, and cost analysis.
  • Oversees kitchen sanitation efforts with the Assistant Executive Chef and/or Executive Steward to maintain the highest standards of cleanliness.
  • Ensures all culinary staff follow proper dress code and maintain a professional appearance (uniforms, hats, name tags, etc.).
  • Monitors kitchen equipment, reporting and addressing any maintenance needs promptly with Engineering and management.
  • Ensures compliance with all safety standards and reports unsafe conditions to upper management.
  • Supports a culture of professionalism, teamwork, and continuous improvement within the culinary team.

Qualifications:

  • Must have and/or obtain a Washoe County Food Protection Manager Certification.
  • High school graduate or G.E.D.
  • Culinary apprenticeship or culinary school graduate.
  • Five or more years in hotel restaurant/casino outlets or individual restaurants pertaining to the specialized high-volume area.
  • Culinary background must have an emphasis on high volume, quality cuisine as well as team building, interpersonal, and managerial skills.
  • Must be able to lift at least 20 to 30 lbs. repeatedly and 75 lbs. on occasion.
  • Working knowledge of computers, including Microsoft Word and Excel.
